SEA, FOREST & VINES WINE DINNER AT THE MARKER HOTEL, DUBLIN
The evening began at 7pm with a canapé reception on our Rooftop Bar & Terrace taking in the stunning city views before retreating to our Brasserie. The evening delivered a unique arrangement of flavours to delight even the most sophisticated of palettes with a six course menu, carefully created by our Executive Head Chef Gareth Mullins.
“I like the challenges that hotels throw at you, I like the diversity of having to work with a big group of people and a lot of different food concepts and different moving parts all the time. I always wanted to be the Executive Chef of a five star hotel in Dublin. I think it’s important in your career to set goals and then go after them.”
Featuring an abundance of seasonal produce, including berries which were foraged and fermented in The Marker kitchens, the menu was delicately paired on the evening with a selection of bio dynamic and natural wines from Spain, France, South Africa and California. We were joined on the evening by Mick O’ Connell, Master of Wine at Findlaters Wines and Spirits who shared some insights about bio dynamic and natural wine throughout the night – a must for wine connoisseurs.
