They are delighted to be taking part in Taste the Island 2019 where the Brasserie will showcase the best of Irish produce through an exclusive three course menu available to book from September – November.

The Executive Head Chef Gareth Mullins has a huge passion for locally sourced Irish produce and uses them in each recipe he creates. This passion is reflected in Gareth’s appointment as Commissioner General of Eurotoques Ireland which consists of 200 of the country’s best known chefs, producers and educators with an aim to protect our Irish culinary heritage and inspire future generations.

Gareth loves discovering new and upcoming Irish producers, using the hotel to showcase these exciting ingredients. Each one is researched thoroughly and vetted to ensure that we can stand over the provenance of every single ingredient. It is not just about sourcing the best, but sourcing the best of the season. For our Taste the Island experience, guests will have the opportunity to awaken their tastebuds with Flaggy Shore Oysters from Co. Clare, John Stone Beef from Co. Together they regularly taste, sample and dissect our food so that the team are aware of every single element of each dish. An understanding of the ingredients and techniques used is key to our service. It means they can bring the intention behiind each dish right to the table. The team brings a level of service that is understated, yet attentive.
