Missing those long, easy nights in Soho House? Whether you’re a member or not, recreate some of the ambiance with these recipes for three of the group’s classic cocktails. Here are the Negroni, the Picante and the Eastern Standard – just remember, no suits…

PICANTE

This Soho House staple is a fired-up version of a classic margarita, with added chilli for extra bite.

INGREDIENTS

  • Chilli pepper (about 1/4-inch wide)
  • 10 coriander leaves with stem
  • 50ml of reposado tequila (or any tequila you have available)
  • 20ml of agave nectar (or honey)
  • 25ml of fresh lime juice
  • Garnish: top end (stem) of the chilli pepper

GLASS

  • Rocks

METHOD

  1. Cut a small piece of chilli and press it with a muddler in a cocktail shaker tin.
  2. Hand-clap the coriander and drop into the shaker.
  3. Add the rest of the ingredients, then shake and fine strain into an ice-filled rocks glass.
  4. Cut off the top end of the chilli pepper and place stem upwards in the drink to garnish.

SOHO NEGRONI

With three types of alcohol, the Soho Negroni packs a powerful punch. Served in a smart rocks glass with an orange garnish, this is the ideal drink to mark the onset of evening.

INGREDIENTS

  • 25ml of gin
  • 25ml of suze
  • 25ml of Martini Bianco
  • Garnish: orange peel (rough cut)

GLASS

  • Rocks

METHOD

  1. Add all ingredients to a mixing glass one by one, using a jigger to measure each out.
  2. Add cubed ice and stir until the mixture has been chilled and diluted to the correct amount.
  3. Strain into a pre-chilled rocks glass and garnish with rough cut orange peel.

EASTERN STANDARD

You’ve got the option of either vodka or gin to recreate Soho House’s infamous, citrusy Eastern Standard.

INGREDIENTS

  • 50ml of vodka or gin
  • 25ml of fresh lime juice
  • 20ml of simple syrup
  • 3 cucumber slices, muddled
  • 3 mint leaves, hand-clapped
  • Garnish: A slice of cucumber, rubbed on the rim of the glass then placed in the cocktail

GLASS

  • Coupe

METHOD

  1. Muddle the cucumber slices in a shaker tin. Add the mint once you have hand-clapped it to release the oils.
  2. Add the rest of the ingredients in the shaker with ice.
  3. Shake and fine-strain (to ensure the cocktail is smooth) into a coupe glass.
