THERE is much that is unique about the family-run Granville Hotel in Waterford with its firm foundation in Ireland’s Georgian Era and onward to independence, culminating early in the last century.

Restored to its former grandeur by the Cusack family after purchase in 1979 the hotel has retained much of its historic charm and elegance without sacrificing modern comfort, so important to guests at home and abroad.

In the Pynck on a recent staycation were elegantly appointed communal spaces reflecting what was in store for even just one overnight guest sequestered in a room with a view over the River Suir and yachts moored in the marina below beside the landmark Clock Tower on Meagher Quay.

The Granville has survived and indeed, thrived since doors reopened last July with echoes of silver service, a casualty of the pandemic remaining in every aspect of hospitality and food. A hotel that has earned industry accolades, rooms are full and restaurant service is by prior booking, and walk-ins may have to be turned away.

“We are full almost every night since we reopened back in July, said the hotel’s restaurant supervisor Laurence Curtin. “It is mainly people living in Ireland on their staycations and we get a lot of people coming back for our packages.”

The hotel has served as a city hub almost as long as it has stood beside the river and maintains close links within the community. The menus are full of locally sourced food in the Thomas Francis Meagher Bar and the Bianconi Restaurant including that iconic loaf, the Waterford Blaa.

“It is traditional Irish food,” said Laurence Curtin. “All of our menus have locally sourced food first from Waterford and then from nearby counties, as much from the Southeast as we can.”

Ireland’s ‘Sunny Southeast’ is graced with a comparably high sunshine in context with much of the rest of the country, another reason to staycation soon and frequently to see all the sites from the Viking Triangle to medieval halls, palaces and round towers, and along the quays and in the city square.
