Much is said about the food you miss when living away from home, but like many others returning from around the globe, Dave McSharry knew there was one in particular he was going to miss when he returned to Ireland in 2020. After three years studying business and entrepreneurship in Sydney, former Connacht Rugby Player Dave spotted a gap in the market for the premium cookies and cookie dough that are a staple treat in homes around the world, and began the process of developing his own recipe during the first nationwide lockdown in 2020.

Now just six months later, Hot Chip Dublin’s rolls of bake-at-home dough are available online and in over thirty-five select Dublin locations including Avoca, Fallon and Byrne and Mortons, with ready to eat cookies in a number of Dublin cafés. The giant cookie’s decadent appearance and taste is achieved using Irish Butter and a generous helping of Belgian Chocolate Chips, creating a dough that, when baked, produces a crisp-edged cookie with a soft melt-in-your-mouth cake-like centre that is unlike anything else on the market.

Choosing a flavour may be the hardest part, as each roll comes wrapped in non-stick baking parchment, simply slice the roll into 4 rounds for giant cookies or 12 for smaller ones, place on the sheet and bake in the oven for 12-20 minutes depending on your preferred consistency.

After Dave McSharry’s professional rugby career came to an end in 2016 with injury he moved abroad to study business management and entrepreneurship in Sydney Australia. While studying he was always on the lookout for ideas that could potentially work in the Irish market and had a keen interest in food and drink offerings, but it was only when he realised that when moving home would mean he no longer could access his favourite Australian treat that he spotted a gap in the Irish Market for premium cookie dough and Hot Chip Dublin was born.

During the first lockdown of 2020 he spent a few months creating and perfecting the recipe that is used today, officially launching in September 2020. The unique and novel size, taste and overall look and feel of the “signature” Hot Chip Dublin cookie combined with more people looking for at home activities during the repeated lockdowns, has proved to be a winning formula and only six months on Hot Chip Dublin is stocked in over thirty-five Dublin locations with nationwide expansion underway for the next six.
