Alpro – Bake The Weekend Away
This Easter will be like no other. Given everyone is baking, we thought we’d share a delicious recipe from Alpro for a simple vanilla cake.
This vanilla cake from Alpro is a one-step cake that is a breeze to make, and it can be made gluten-free by swapping out the self-raising flour with a gluten-free alternative.
Here’s what you will need:
- 250g of self-raising flour
- 70g of vanilla sugar
- 190ml of Alpro Soya Drink
- 75g of sunflower oil
- 40ml of boiling water
- 1 vanilla pod or 1 ts vanilla essence
- 3 tbsp of flaked almonds
- pinch of salt
And, here’s how to do it:
- Preheat the oven to 180°C and oil an 8″ cake tin
- In a mixing bowl, stir together the self-raising flour, vanilla sugar, seeds of the vanilla pod (or essence) and a pinch of salt.
- Add Alpro Soya Drink, sunflower oil and boiling water and whisk the whole lot until smooth
- Pour the mixture into the tin, sprinkle over the flaked almonds and bake for 40-45 minutes until a lovely golden brown.
- Test by piercing with a wooden skewer – when it comes out clean, the cake is ready
- Let the cake cool. (We know, hard not to dive in straightaway!).
