Alpro – Bake The Weekend Away

This Easter will be like no other. Given everyone is baking, we thought we’d share a delicious recipe from Alpro for a simple vanilla cake.

This vanilla cake from Alpro is a one-step cake that is a breeze to make, and it can be made gluten-free by swapping out the self-raising flour with a gluten-free alternative.

Here’s what you will need:

  • 250g of self-raising flour
  • 70g of vanilla sugar
  • 190ml of Alpro Soya Drink
  • 75g of sunflower oil
  • 40ml of boiling water
  • 1 vanilla pod or 1 ts vanilla essence
  • 3 tbsp of flaked almonds
  • pinch of salt

And, here’s how to do it:

  1. Preheat the oven to 180°C and oil an 8″ cake tin
  2. In a mixing bowl, stir together the self-raising flour, vanilla sugar, seeds of the vanilla pod (or essence) and a pinch of salt.
  3. Add Alpro Soya Drink, sunflower oil and boiling water and whisk the whole lot until smooth
  4. Pour the mixture into the tin, sprinkle over the flaked almonds and bake for 40-45 minutes until a lovely golden brown.
  5. Test by piercing with a wooden skewer – when it comes out clean, the cake is ready
  6. Let the cake cool. (We know, hard not to dive in straightaway!).
