Howth Castle Cookery School has launched a new series of workshops focused on rich, warming flavours of the autumnal season. Set in the beautiful kitchen of Howth Castle, these classes are designed to help participants make the most of autumn’s local produce and classic comfort dishes. Whether looking to refine culinary skills, try something new with friends, or simply enjoy the best of autumn flavours in a unique setting.

Tarte Tatin

Serves 6

Ingredients:

8 apples

150g butter

180g sugar

1 sheet of puff pastry

 

Method:

  1. Preheat oven 200º Gas mark 6
  2. Peel, core the apples and cut into quarters. Put the butter and sugar in a hob friendly baking dish. Over a medium to high heat, cook the butter and sugar together mixing well all the time until you get a light brown coloured caramel. Remove from the heat and let it cool.
  3. Arrange the apples on the caramel, packing them very tightly. Cover with foil paper and cook for 5 or ten minutes over a high heat.
  4. Cut the puff pastry in a round slightly larger than the dish. Put the pastry over the apples, tucking in the sides well in the baking dish.
  5. Cook for about 30 minutes, it is ready when the pastry has puffed up and the caramel comes bubbling on the sides of the dish.
